Meatballs

Ingredients:

  • 11 ½ lbs. ground beef
  • 3 eggs
  • 1/4 cup Parmesan cheese, grated
  • 1/2 tsp. garlic powder
  • 1 tbsp. dried parsley
  • 1/2 tbsp. dried oregano
  • 4 slices low sodium bread, crumbled
  • 3 onions, chopped
  • 6 oz. no-salt-added tomato paste
  • 1 ½ cups water
  • 1/2 cup red wine vinegar
  • 3 tbsp. brown sugar

Directions:

  1. Combine beef, eggs, cheese, seasonings and bread. Form into 1-inch balls.
  2. Bake at 350°F for 30 to 40 minutes, turning once.
  3. Sauté onions in a few tablespoons of the meat drippings.
  4. Combine onions, tomato paste, water, vinegar and brown sugar and place in slow cooker. Add meatballs.
  5. Stir to mix and cook on low for several hours.
