Apple Cake

This classic apple cake offers a warm embrace of fragrant spices and tender apples in every bite.

Ingredients:

  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 eggs
  • 2 1/2 cups all-purpose flour
  • 2 tsp sodium-free baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 3 cups apples, peeled and chopped

Directions:

  1. Mix oil and sugar together; add eggs.
  2. Sift together flour, baking powder, baking soda, cinnamon and nutmeg; add to sugar mixture.
  3. Stir in vanilla and fold in apples.
  4. Pour into a 9x13-inch pan.
  5. Bake at 350 degrees Fahrenheit for 1 to 1 1/2 hours until knife inserted in center comes out clean.
  6. Dust top with powdered sugar if desired.
